Abstract
⺠Quantitative risk assessment of interventions at a baby spinach packinghouse was conducted. ⺠The tool allows producers to evaluate scenarios for risk of contamination with Salmonella. ⺠Results demonstrate that common packinghouse practices are not sufficient to avoid risk of an outbreak. ⺠Cross-contamination is the most probable scenario for prevalence of contamination on an entire lot of daily production.
