Abstract
⺠Low-acid mamey pulps can support the growth of Listeria monocytogenes. ⺠Mamey pulps at pH 4.5 hindered but did not inhibit the bacterial growth. ⺠Mamey pulps at pH 4.0 inhibited the bacterial growth for 15 days at 4 °C. ⺠Gompertz model had an adequate goodness of fit and accuracy in the modeling.
