Abstract
► Statistical modeling techniques were used to determine the inhibitory effects of ZnCl2 on yeasts. ► ZnCl2 showed anti-fungal activity at relatively low levels, ceasing yeast growth at 250 mg/L ► However, at 1000 mg/L of ZnCl2, a clear reduction in the initial number of viable cells was noticed. ► Thus, this compound could be used in vegetable packaging to control yeast growth.
