Abstract
⺠We assessed the effectiveness of heat treatment on L. monocytogenes survival. ⺠Ricotta salata were contaminated with a mixture of 3 L. monocytogenes strains. ⺠A reduction of 6 log10 cfu gâ1 in L. monocytogenes count was obtained.
