Abstract
⺠The processing conditions and quality of Alheira de Vinhais were studied. ⺠The structural conditions of regional kitchens were satisfactory. ⺠The European and Portuguese normative were complied. ⺠Reduced food processing hygienic conditions were sometimes observed. ⺠Microorganisms associated with foodborne illnesses were not detected.
