Abstract
⺠This study assessed the antimicrobial efficacy of ozone sprays against Listeria innocua on salmon fillets. ⺠Ozone sprays at 1.5 mg/L are effective in reducing initial counts of aerobic bacteria on salmon fillets. ⺠Ozone sprays at 1.5 mg/L significantly reduced L. innocua on salmon fillets. ⺠Ozone (â¤1.5 mg/L) did not induce significant increases in lipid oxidation within refrigerated salmon fillets. ⺠Ozone treatments resulted in ensuring microbial safety and quality of processed salmon.
