Abstract
⺠High pressure (HP) argon (Ar) treatment was applied to fresh-cut apples. ⺠Changes in the quality of fresh-cut apples treated by HP Ar were investigated. ⺠HP Ar treatment improves the quality of fresh-cut apples at cold storage. ⺠Combing HP Ar with dip is a effective method for preserving fresh-cut apples.
