Abstract
► Research analyzed deoxynivalenol (DON) in soy sauces consumed in China. ► 97.5% of Soy sauce was contaminated with DON in a range of 4.5-1245.6 μg/l ► Manufacturing process and quality grade had impacts on DON contents of soy sauces. ► Exposure to DON through the consumption of soy sauces is at a very low risk level.
