Abstract
⺠Research analyzed deoxynivalenol (DON) in soy sauces consumed in China. ⺠97.5% of Soy sauce was contaminated with DON in a range of 4.5-1245.6 μg/l ⺠Manufacturing process and quality grade had impacts on DON contents of soy sauces. ⺠Exposure to DON through the consumption of soy sauces is at a very low risk level.
