Abstract
⺠Listeria monocytogenes different biotypes were apparently related to production technology. ⺠Sub-optimal growth conditions (salt, T) can enhance physiological strains biodiversity. ⺠Different behaviour of L. m. from smoked salmon can be underestimated in common media. ⺠Impact of strain biodiversity may be relevant under thermal abuse storage conditions. ⺠Knowledge of strain growth in presence of stressors is necessary to improve prediction models.
