Abstract
► We study the anti-listerial activity of chitosan and Enterocin 416K1 in RTE products. ► Listeria monocytogenes was artificially added to ready-to-eat vegetable and fruits. ► Best anti-listerial activity emerged in RTE treated with chitosan-enterocin associated. ► These natural bioactives can improve safety and extend the shelf life of RTE food.
