Abstract
⺠Enterocin AS-48 can be used to prolong the self life of cooked ham. ⺠AS-48 by itself can control Lactobacillus sakei, Brochothrix thermosphacta, and Staphylococcus carnosus. ⺠Several food-grade chemical preservatives increases the action of AS-48 against L. sakei. ⺠Storage under vacuum is very effective in increasing the activity of AS-48 against L. sakei and B. thermosphacta.
