Abstract
⺠Implementation of GMPs in a mozzarella cheese processing plant. ⺠Steps taken included diagnosis, road map, corrective measures and follow-up. ⺠Effectiveness of implementation compared before and after implementation of GMP. ⺠Percentage of conformity increased from 32% to 66% after GMP implementation. ⺠GMP implementation changed overall organization of the cheese processing unity.
