Abstract
⺠Hydrolyzed caseinomacropeptide (hCMP) was glycated with galactooligosaccharides (GOS). ⺠hCMP:GOS glycoconjugates significantly reduced pathogen adhesion to mucin. ⺠hCMP:GOS conjugates may affect interaction of virulence factors of L. monocytogenes. ⺠hCMP:GOS-Lu glycoconjugates inhibited the production of IL-1β by intestinal cells. ⺠This approach could be a new alternative to obtain multi-functional novel ingredients.
