► Phytoalexins, glyceollins, accumulate in soybean seeds as defense mechanism. ► Biotic and abiotic elicitors induce the synthesis and accumulation of glyceollins. ► Glyceollins possess antiestrogenic, anticancer and antioxidant activities. ► Glyceolins also regulate glucose metabolism and inflammatory signaling pathways. ► Soybean phytoalexins have prospects in health promotion and other food applications.
