Abstract
⺠Caspases-induced reproducts are strongly correlated with meat tenderness. ⺠Caspases involved in postmortem proteolysis of myofibrillar proteins. ⺠H2O2 and NAC can accelerate the degradation of myofibril proteins, especially NAC.
