Abstract
► The effect of cyclodextrins on cyanidin-3-O-glucoside color was investigated. ► The effect of cyclodextrins on cyanidin equilibrium constants was investigated. ► Addition of β-cyclodextrin resulted in the fading of the anthocyanin solution. ► β-cyclodextrin induced the increase of the hydration equilibrium constant.
