Abstract
⺠The effect of cyclodextrins on cyanidin-3-O-glucoside color was investigated. ⺠The effect of cyclodextrins on cyanidin equilibrium constants was investigated. ⺠Addition of β-cyclodextrin resulted in the fading of the anthocyanin solution. ⺠β-cyclodextrin induced the increase of the hydration equilibrium constant.
