Abstract

âº Whole physiological barriers in human tract for peptides were originally employed. âº Alcalase-hydrolysates have better bioavailability than gastrointestinal digests. âº Low-molecular-weight peptides exert better gastrointestinal stability. âº Low-molecular-weight peptides play important roles in cellular antioxidant efficacy.
