Abstract
⺠Red cabbage anthocyanin profile consisting of twenty cyanidin glucoside derivatives ⺠Nonacylated cyanidin-3-diglucoside-5-glucoside was a major anthocyanin in red cabbage. ⺠Red cabbage is rich in acylated anthocyanins ⺠Cyanidin-3(sinapoyl)(sinapoyl)diglucoside-5glucoside had the highest antioxidant activity. ⺠The kind of acylation affected the antioxidant activity of acylated anthocyanins.
