Abstract
⺠Compound contributing to the antioxidant activity of MRPs was investigated. ⺠Chromatogram of Glc-His MRPs on Bio-gel P-2 column was illustrated. ⺠GC-MS analysis and HPLC analysis was were employed to identify antioxidants in MRPs. ⺠DDMP was identified as a strong antioxidant in Glc-His MRPs.
