Abstract
⺠We evaluated the T2 distribution change in boiled dry spaghetti using MRI. ⺠Internal structure of boiled dry spaghetti was observed by fluorescence microscopy. ⺠Monitoring the T2 profile enables estimation of the degree of starch gelatinization.
