Abstract
⺠Volatile profiles of sweet sparkling wines made by Brachetto grapes were defined. ⺠Significant changes in many compounds were observed during wines shelf life. ⺠The behavior of some volatile compounds was predicted by the RSM approach. ⺠Significant correlations were found among olfactory judgment and some terpenoids.
