Abstract
► Volatile profiles of sweet sparkling wines made by Brachetto grapes were defined. ► Significant changes in many compounds were observed during wines shelf life. ► The behavior of some volatile compounds was predicted by the RSM approach. ► Significant correlations were found among olfactory judgment and some terpenoids.
