Abstract
► This research contributes to obtaining knowledge on hurdle technology. ► The combined effect of PEF and cinnamon against Salmonella typhimurium was studied. ► Addition of cinnamon to milk [1-5%] significantly increases PEF inactivation levels. ► The cinnamon effect proved bacteriostatic and synergistic against S. typhimurium. ► Maximum synergistic effect (0.989 log10) was achieved at 10kV/cm-3000µs+5% cinnamon.
