Abstract
⺠The interaction of different salivary proteins/tannins by HPLC and DLS was studied. ⺠It was intended to know the relative affinity, solubility and size of the complexes. ⺠aPRPs and statherin interact greatly with both tannins. ⺠bPRPs interact poorly with procyanidin trimer and gPRPs only complex with PGG. ⺠Different tannins/salivary proteins may have different functions in astringency.
