Abstract
► The interaction of different salivary proteins/tannins by HPLC and DLS was studied. ► It was intended to know the relative affinity, solubility and size of the complexes. ► aPRPs and statherin interact greatly with both tannins. ► bPRPs interact poorly with procyanidin trimer and gPRPs only complex with PGG. ► Different tannins/salivary proteins may have different functions in astringency.
