Abstract
► Cereal product contains 77% of pores with mean size 270 μm and wall thickness 47 μm. ► Fragmentation leads to heterogeneous fragment size distribution under compression. ► FE computation predicts Young's modulus between 46 and 139 MPa. ► For critical stress 3.39-3.47 MPa, damage model matches fragment size distribution. ► Conversion of low stress region to fragments is requested to build size distribution.
