Abstract
► A new ferritin from broad bean seed (BBSF) was purified to homogeneity. ► BBSF has the highest amounts of H-2 subunit in all known phytoferritins. ► BBSF is much more stable than soybean seed ferritin and pea seed ferritin. ► Its higher stability is beneficial to its application for iron supplement.
