Abstract
⺠A new ferritin from broad bean seed (BBSF) was purified to homogeneity. ⺠BBSF has the highest amounts of H-2 subunit in all known phytoferritins. ⺠BBSF is much more stable than soybean seed ferritin and pea seed ferritin. ⺠Its higher stability is beneficial to its application for iron supplement.
