Abstract

•Instant edible films were prepared based on dietary fiber.•The prescription of dietary fiber edible film was optimized.•Barrier properties and water solubility of the obtained film were investigated.

Instant edible films were prepared from the dietary fiber, which was processed with dynamic high pressure microfluidization (DHPM) at 100 MPa. The effects of liquid-solid ratio of dietary fiber solution, thickener, beeswax and glycerol on water-solubility (WS), water vapor permeability (WVP) and oil permeability (OP) of the dietary fiber film were investigated. This work was conducted to optimize the prescription of the dietary fiber edible film by an orthogonal experiment design L9 (34). According to the results of orthogonal experiment, the optimum prescription was as follows: the liquid-solid ratio of dietary fiber solution was 35 mL distilled water/g DF, and the concentrations of thickener, beeswax and glycerol were 1 g, 1 g and 1.25 g per 100 g dietary fiber suspension, respectively. The obtained films could dissolve in 25 °C water within 19 s, and the WVP and OP were 4.348 × 10−12 gm−1 s−1 Pa−1 and 4.06 × 10−3 gm−1 d−1, respectively.
