Abstract
⺠Annealed and heat-moisture treated water chestnut starch exhibited modified properties. ⺠Modified starches showed reduced values for most of the pasting parameters. ⺠Annealed and heat-moisture treated starches showed higher gelatinization temperature. ⺠Such modified starches can be better utilized for canned and frozen foods.
