► Annealed and heat-moisture treated water chestnut starch exhibited modified properties. ► Modified starches showed reduced values for most of the pasting parameters. ► Annealed and heat-moisture treated starches showed higher gelatinization temperature. ► Such modified starches can be better utilized for canned and frozen foods.
