Abstract
⺠Proteolysis of sardine surimi was mediated by heat activated endogenous proteases. ⺠Addition of protein isolate from legume seeds could inhibit the proteolysis. ⺠Black bean or mungbean protein isolate improved the gel properties of surimi.
