Abstract
⺠Walnut contains high concentration of bioactive lipidic and phenolic compounds. ⺠Nitrogen fertilisation affects the oxidative stability and the phenolic content. ⺠Nitrogen fertilisation does not influence the sterols content of walnuts. ⺠OXITEST analysis was applied for the first time to study the oxidative stability.
