Abstract

âº Fatty acid profile of ewe's milk fat globule membrane and core were investigated. âº The membrane and core showed remarkable differences. âºÂ The membrane showed more polyunsaturated and saturated fatty acids than the core. âº The core had a higher content of monounsaturated and short chain fatty acids.
