Abstract
⺠Fatty acid profile of ewe's milk fat globule membrane and core were investigated. ⺠The membrane and core showed remarkable differences. âºÂ The membrane showed more polyunsaturated and saturated fatty acids than the core. ⺠The core had a higher content of monounsaturated and short chain fatty acids.
