Abstract
⺠Alkaline microbial protease is more efficient than the neutral enzymes in hydrolysing rice protein. ⺠Rice hydrolysates with smaller molecular weight exerts stronger antioxidant activities. ⺠Rice hydrolysates significantly inhibit meat lipid oxidation during the 15-day storage.
