Abstract
⺠We created a method to describe the sensory properties of Finnish apple cultivars. ⺠The sensory space consist of sour-sweet, mealy-juicy and crispy-mealy continua. ⺠The lexicon developed proved to be consistent and to portray the cultivars. ⺠Simplified profiles are created for horticultural and marketing trade of apples. ⺠Simplified profiles are ideal in communicating the apple quality to the consumers.
