Abstract
⺠Flash vacuum expansion resulted in higher juice yield from white grapes. ⺠Flash vacuum expansion resulted in higher polyphenols in white grape juice. ⺠Impedance measurements demonstrated rupture of fruit cell walls. ⺠Flash vacuum expansion of Concord grapes did not affect juice yield. âºÂ Concord grape juice has increased anthocyanins compared to enzyme processing.
