Abstract
► The fat globule size increased as pressure and pressurization time increased. ► Higher temperature had a negative effect on fat globule size. ► The value of uniformity of index n in RRSB equation ranged from 0.931 to 1.318. ► Similarly, the value of average diameter Ds ranged from 1.68 × 10−6 to 3.12 × 10−6 m. ► The linear fitting of n and Ds showed good fit.
