Abstract
⺠The fat globule size increased as pressure and pressurization time increased. ⺠Higher temperature had a negative effect on fat globule size. ⺠The value of uniformity of index n in RRSB equation ranged from 0.931 to 1.318. ⺠Similarly, the value of average diameter Ds ranged from 1.68 Ã 10â6 to 3.12 Ã 10â6 m. ⺠The linear fitting of n and Ds showed good fit.
