Abstract
⺠Zein nanoparticles encapsulating essential oils (EOs) dispersed well in water. ⺠Antioxidant activity of the zein nanoparticles encapsulating EOs was obtained. ⺠Zein nanoparticles encapsulating EOs showed antimicrobial ability against E. coli. ⺠The pH conditions have no effect on the antioxidant or antimicrobial ability.
