Abstract
► Zein nanoparticles encapsulating essential oils (EOs) dispersed well in water. ► Antioxidant activity of the zein nanoparticles encapsulating EOs was obtained. ► Zein nanoparticles encapsulating EOs showed antimicrobial ability against E. coli. ► The pH conditions have no effect on the antioxidant or antimicrobial ability.
