Abstract
⺠Electrical discharges are applied on grape seeds for polyphenols extraction. ⺠The effects of pulsed electric fields and electrical discharges are studied. ⺠Electrical treatments reduce the required diffusion time. ⺠The application of treatment in the presence of ethanol highly improves the extraction yields.
