Abstract
⺠Study of orange pulp fiber incorporation in dressing-type o/w emulsions. ⺠Oil droplet-pulp particle interaction results in emulsion droplet aggregation. ⺠Pulp-incorporating emulsions exhibited high viscosity and improved stability. ⺠Rheological parameter values increase with aging depends on particle size.
