Abstract
⺠Meat toughness can be induced by freeze-thaw abuse. ⺠Kiwifruit juice contains significant proteolytic activity. ⺠Injection of kiwifruit juice into freeze-thaw treated pork improves meat tenderness through degrading myosin.
