Abstract
⺠Glutaminase deamidation was effective to modify water-insoluble rice glutelin. ⺠Molecular weight distributions of rice glutelin were rearranged by deamidation. ⺠Deamidated rice glutelin maintained a more flexible form. ⺠Deamidated samples showed excellent solubility under pH 5.0 and neutral condition.
