Abstract
► Glutaminase deamidation was effective to modify water-insoluble rice glutelin. ► Molecular weight distributions of rice glutelin were rearranged by deamidation. ► Deamidated rice glutelin maintained a more flexible form. ► Deamidated samples showed excellent solubility under pH 5.0 and neutral condition.
