Abstract
► We investigate the potential of creating a US consumer market for Asian carp meat. ► A national survey was conducted to determine the potential interest of fish consumers. ► Age, purchase habits, food neophobia and locally produced were influential variables. ► Seventy-two percent of respondents were willing to try a free sample of Asian carp. ► Based on our results, a consumer market for Asian carp has potential in the US.
