Abstract
Escherichia coli and Staphylococcus aureus are two common microorganisms, which exist widely in the environment and easily contaminate food such as vegetables and dairy products, respectively. Considering heat treatment may destroy some heat-sensitive quality of the products, this study evaluated synergetic effects of high-pressure carbon dioxide (HPCD) combined with the bacteriocin nisin. The investigations provided evidence for potentially combined application of HPCD and nisin to help keep food safe in the industry.
