Screening of edible mushrooms and extraction by pressurized water (PWE) of 3-hydroxy-3-methyl-glutaryl CoA reductase inhibitors

► Some mushrooms showed HMGCR inhibitory activity. ► Lentinula edodes and Pleurotus ostreatus water extracts showed high inhibitory capacities. ► The HMGCR inhibitory activity was followed during the cultivation process. ► Fractions with high HMGCR inhibitory activity could be obtained by ASE.
