Purification and characterisation of a zinc-binding peptide from oyster protein hydrolysate

► A novel zinc-binding peptide was identified from oyster protein hydrolysates. ► The amino acid sequence of the peptide was HLRQEEKEEVTVGSLK. ► The zinc-binding capacity was determined using a gel chromatography method. ► The zinc-binding capacity of the purified peptide is preserved upon in vitro simulated digestion. ► Features of target peptide were investigated by UV and FTIR.
