Functional goat milk cheese with feruloyl esterase activity

► We developed a functional goat cheese with feruloyl esterase activity. ► Effect of the intake of these goat cheeses was evaluated in vivo. ► Intake of goat cheeses increased intestinal feruloyl esterase activity in mice. ► Goat cheeses decreased plasmatic thiobarbituric acid-reactive substances levels and increased glutathione reductase activity. ► Goat cheeses with feruloyl esterase activity improved the oxidative status in mice.
