Proteomic analysis provides new insight into the chicken eggshell cuticle

► The cuticle proteome, responsible for microbial resistance, is poorly characterized. ► Cuticle proteins were selectively extracted and subjected to LC/MS/MS analysis. ► Similar to Kunitz-like protease inhibitor and ovocalyxin-32 are the most abundant protein constituents. ► Antimicrobial proteins and protease inhibitors are implicated in cuticle function.
