Rheology and adsorption behaviour of β-casein and β-lactoglobulin mixed layers at the sunflower oil/water interface

- Adsorption of β-casein/β-lactoglobulin mixtures was studied at the O/W interface.
- Transient interfacial tests and harmonic drop oscillations were performed.
- Small amplitude oscillations evidenced a prevalent solid-like behaviour.
