Solubilization of food bioactives within lyotropic liquid crystalline mesophases

This paper surveys the solubilization of hydrophilic, lipophilic and amphiphilic guest molecules for food applications and illustrates the corresponding structural transformations. Recent developments in liquid crystal characterization methods are discussed.
