► Selenite was used to produce Se-enriched sauerkraut. ► Selenomethylselenocysteine was the major Se compound found in Se-enriched sauerkraut. ► Se supplementation improved the content of the bioactives indol-3-carbinol and indole-3-acetonitrile in sauerkraut. ► Se-enriched sauerkraut extracts exhibit high antioxidant and anti-inflammatory properties. ► Se-enriched sauerkraut has potential as functional food.
