Molecular fragmentation of wheat-germ agglutinin induced by food irradiation reduces its allergenicity in sensitised mice

► The agglutinin from wheat germ is largely responsible for wheat allergies. ► We investigated the action of ionising radiation on WGA's allergenicity in mice. ► Irradiation reduces the immunological and allergic effects observed due to native WGA.
