Adsorption of sugar surfactants at the air/water interface

► A novel method for the estimation of the surfactant monolayer capacity is proposed. ► The driving force of adsorption is determined as a function of the adsorbed amount. ► A 2D thin alkane film is formed once a certain adsorbed amount is exceeded. ► The driving force of adsorption is not affected by the number of glucose units.
